- 1 whole chicken, cut in pieces

- 1 bottle bbq/teriyaki sauce
- 1 can crushed pineapple

Directions:

1. Mix and cook in oven, pot or crockpot.
2. Serve over rice.

Apricot and Garlic Chicken

Ingredients:

- 1 chicken, quartered or cut into sixths
- 3/4 cup mayonnaise
- 1/2 cup apricot jam
- 2 garlic cloves, minced
- 1/2 tsp black pepper
- 6 dried apricots, cut up

Directions:

1. Preheat the oven to 180°C.
2. Place the chicken pieces on an oven tray, covered with baking paper.
3. With a stick blender, mix together the mayonnaise, jam, and spices. Smear the sauce on to the chicken. Arrange the cut-up apricot pieces decoratively over the chicken. Bake for an hour or until the chicken is browned on top and, when pricked, flows with clear juices.

Baked Honey Sriracha Chicken

Ingredients:

- 2 boneless, skinless chicken breasts, cubes into 2 inch chunks
- 1 egg
- 1 cup breadcrumbs
Sauce:
- 1/4 cup honey
- 1/4 cup soy sauce
- 3 crushed garlic cloves
- 1 tbsp sriracha
- pepper to taste
- 1 tbsp sesame seeds
- 1 tbsp spring onions, chopped

Directions:

1. Preheat your oven to 350 degrees and coat a cooking tray with some baking spray.
2. Add the cubed chicken to a bowl, crack the egg in, and mix until the chicken cubes are completely coated. Put the bread crumbs into a bowl, dip each cube into the bread crumbs, and set them aside on a baking tray. Place them into the oven for 20 minutes.
3. In the meantime, make the sauce by combining the honey, sriracha, garlic, soy sauce, and pepper in a bowl. Mix until they are well combined.
4. Add the baked chicken to a bowl, pour the sauce over it, and toss until it's well coated.
5. Garnish with sesame seeds and spring onions, and serve.

Baked Schnitzel

Ingredients:

​- chicken or turkey breast meat
- mayonnaise
- mustard
- sweet chili sauce
- bread crumbs

Directions:

1. Mix mayonnaise with some mustard and sweet chili sauce
2. Dip chicken breasts into sauce and then into breadcrumbs, lay out on baking tray and bake covered.
3. Uncover for the last 15 minutes.

Cajun Chicken

Ingredients:

- 6 chicken breast halves
- 1 tbsp red pepper
- 1 tbsp black pepper
- 1 tbsp paprika
- 2 tbsp garlic powder
- 1 tbsp oregano
- 1 tbsp thyme
- 1 tbsp onion powder
- 1 tbsp salt
- 1/3 cup olive oil

Directions:

1. Clean chicken, removing skin and all visible fat. Rinse with cold water and pat dry.
2. In a blender, mix red and black pepper, paprika, garlic powder, oregano, thyme, onion powder and salt. Slowly pour in the olive oil and blend until a thick paste is formed. Rub each chicken breast with the paste until it is thoroughly coated. Put the chicken on a greased broiler pan, cover, and refrigerate overnight so that the paste and seasonings can marinate the chicken.
3. Broil the chicken for 15 minutes, turn and broil 15 more. Cover pan with foil and bake at 300°F for 20 more minutes.
