1 Pan Fudge Cake

Ingredients:

- 1 1/2 cup sugar

- 1/2 cup cocoa

- 1 1/2 tsp baking soda

- 2 cups flour

- 3/4 tsp salt

- 1 1/2 tsp vanilla extract

- 1 1/2 tsp vinegar

- 3/4 cup vegetable oil

- 1 1/2 cup water

Frosting:

- 1 1/4 cup icing sugar

- 3 tbsp cocoa

- 3 tbsp oil

- water - small spoonfuls at a time until desired consistency

Directions:

1. Preheat oven to 350F.

2. In an ungreased 9x13 pan, sift all dry ingredients.

3. Add the liquids and stir just until blended.

4. Bake for 30-35 minutes.

5. Frost with frosting, careful not to tear top of the cake

Bassi's Chocolate Cake

Ingredients:

- 2 1/4 cups flour

- 2 cups sugar

- 3/4 cups cocoa

- 1 cup oil

- 3/4 cup black coffee

- 1/3 cup chocolate liqueur

- 2 tsp baking powder

- 1/2 tsp baking soda

- 1/2 tsp salt

- 4 eggs

- 1 tsp vanilla extract

Directions:

1. Mix in mixer

2. Bake at 175C for 30-35 minutes

Brookies

Ingredients:

Cookie Layer:
- 1/2 cup oil
- 1/2 cup light brown sugar
- 1/4 cup white sugar
- 1 egg
- 1 1/4 cups all-purpose flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 cup semisweet chocolate chips
Brownie Layer:
- 1 cup white sugar
- 1/2 cup oil
- 1 tsp vanilla extract
- 2 eggs
- 1/3 cup cocoa powder
- 1/2 cup all-purpose flour
- 1/4 tsp baking powder
- 1/8 tsp salt

Directions:

1. Preheat oven to 350F. Grease a 9x13-inch baking dish.
2. Beat oil, light brown sugar, 1/4 cup white sugar, and 1/2 teaspoon vanilla extract together in a large bowl until creamy. Add 1 egg; beat until light and creamy, about 2 minutes.
3. Whisk 1 1/4 cups flour, 1/2 teaspoon salt, and baking soda together in a bowl. Gradually stir flour mixture into butter mixture until dough is combined. Stir chocolate chips into dough. Spread dough into the bottom of the prepared baking dish to cover completely.
4. Stir 1 cup white sugar, oil, and 1 teaspoon vanilla extract together in a bowl; add 2 eggs and beat well. Mix cocoa powder into butter mixture until well-combined. Stir 1/2 cup flour, baking powder, and 1/8 teaspoon salt into cocoa mixture until batter is combined. Pour brownie batter over cookie dough and spread to cover completely.
5. Bake in the preheated oven until a toothpick inserted into the center of the brookies comes out clean, 20 to 25 minutes. Cool completely before cutting into bars.

Chocolate Cake with Berry Sauce

Ingredients:

- 350 gram dark chocolate, in chunks
- 200 gram butter, cubed
- 2 tsp instant coffee powder
- 4 eggs, beaten
- 1/3 cup sugar
Sauce
- 250 gram frozen berries, defrosted
- 2 tbsp sugar
- 1/4 cup cherry liquor or Crème de cassis

Directions:

1. Preheat oven to 180C. Prepare a 24 cm round spring-form pan with baking paper or butter.
2. Melt the chocolate, butter and coffee in a double boiler. Take off the fire and cool a bit.
3. In a bowl beat eggs and sugar for about 8 minutes, until it’s puffy and white. Add half the chocolate mixture and fold inside. Add the rest of the chocolate mixture and keep folding until mixed well. Pour into prepared pan and bake 30 minutes until a skewer inserted in middle of cake comes out with a few crumbs. Cool completely before serving with the sauce.
4. Sauce: Put all the ingredients in a food processor and blend until smooth. Chill until serving.

Chocolate Cake with Coconut-Cheese Balls

Ingredients:

Cheese Balls
- 200 gram 9% white cheese
- 50 gram coconut
- 1/4 cup sugar
- 1 egg
- 2 heaped tbsp vanilla pudding
Cake
- 5 eggs
- 3/4 cups sugar
- 2 tbsp flour
- 1/2 tsp baking powder
- 2 tbsp cornflour
- 3 tbsp cocoa
- 50 gram bittersweet chocolate, melted

Directions:

Make the cheese balls
1. Mix all ingredients to a batter. Chill in fridge for 2 hours.
2. Take out and make balls 2 cm in size. Put on greased round baking pan. Freeze for 30 minutes.
Make the chocolate cake. 
3. Preheat oven to 180C.
4. Beat eggs and sugar together. Add flour, cornflour and baking powder and mix by hand. Sift cocoa and add while stirring.
5. Carefully add melted chocolate.
6. Take baking pan out of freezer. Pour chocolate mixture on tip of cheese balls.
7. Bake 40 minutes until set.

Hot Fudge Pudding

Ingredients:

- 1 cup all-purpose flour
- 2/3 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup unsweetened cocoa
- 1/2 cup whole milk
- 2 tbsp melted butter or margarine
- 1 tsp vanilla extract
- 1 cup packed brown sugar
- vanilla ice cream (optional)

Directions:

1. Preheat oven to 350°F. Grease 8" by 8" glass baking dish or shallow 2-quart casserole.
2. In medium bowl, combine flour, granulated sugar, baking powder, salt, cinnamon, and 1/4 cup cocoa. Whisk in milk, butter, and vanilla just until smooth. Spread batter into baking dish.
3. In small bowl, mix brown sugar and 1/4 cup cocoa; sprinkle evenly over batter. Carefully pour 1 1/2 cups boiling water over mixture in baking dish; do not stir.
4. Bake 30 minutes (batter will separate into cake and pudding layers). Cool in pan on wire rack 10 minutes. Serve warm in dessert bowls with ice cream if you like.

Ima's Brownies

Ingredients:

- 4 eggs
- 2 cups sugar
- 1/2 cup oil
- 1/2 cup cocoa
- 1 1/3 cup flour
- 1 tsp baking powder
- 1/2 + 1/8 tsp salt

Directions:

1. Mix eggs, sugar, and oil. Add the cocoa and mix. Add flour, baking powder and salt.
2. Bake about 25 minutes at 175°C-180°C.

Mocha Cake

Ingredients:

- 2 cups all-purpose flour
- 1/4 cup cocoa
- 2 tsp baking powder
- 3/4 cup boiling water
- 1/4 cup instant coffee
- 2 cups sugar
- 1 cup oil
- 4 large eggs
- 2 tsp vanilla sugar
Coffee Glaze
- 1 tsp instant coffee
- 1 tbsp hot water
- 1 cup confectioners’ sugar
- 3 tbsp oil

Directions:

1. Preheat oven to 350F.
2. Mix all-purpose flour, cocoa, and baking powder in a medium bowl. Set aside.
3. In a large bowl, mix boiling water, coffee, sugar and oil. Mix well until coffee and sugar is dissolved. Add eggs and vanilla sugar. Mix well. Add flour mixture to the egg mixture, whisk to combine. Pour batter into pan. Bake 30 minutes. Cool in pan for 10 minutes; remove cake from pan and let cool completely on a wire rack.
4. For coffee glaze: Whisk coffee and hot water in a small bowl. Add confectioners’ sugar and oil and mix until smooth. If glaze it too thick, then slowly add more water, about an 1/8 of a tsp at a time. Drizzle glaze over cooled cake.
NOTE: Original recipe makes in a Bundt pan, I use a regular 9x13.

- 4 eggs
- 1 1/4 cup oil
- 2 1/4 cup sugar
- 1 1/2 tsp vanilla
- 2 3/4 cup flour
- 3 tsp baking powder
- 1 tsp baking soda

- 1 cup cocoa
- 1 3/4 cup hot strong coffee

Directions:

1. Mix all wet ingredients. Add dry ingredients, mix well.
2. Bake about 40 minutes on 175C.
