Almond Glazed Sugar Cookies

Ingredients:
- 1 cup butter
- 3/4 cup sugar
- 1 tsp almond extract
- 2 cups all-purpose flour
- 1/2 tsp baking powder
Glaze: - 1 1/2 cups powdered sugar
- 1 tsp almond extract
- 4-5 tsp water
- sliced almonds

Directions:
1. Heat oven to 400°F.
2. Combine all cookie ingredients in a large mixer bowl. Beat at medium speed, scraping bowl often, until creamy. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets, flatten balls to 1/4-inch thickness with bottom of buttered glass dipped in sugar.
3. Bake 7 to 9 minutes or until edges are very lightly browned. Cool 1 minute; remove from cookie sheets. Cool completely.
4. Stir together all glaze ingredients except almonds with wire whisk in small bowl.
5. Decorate cooled cookies with glaze and almonds as desired.
Amazing Tahini Cookies

Ingredients:
- 3 cups flour
- 1 packet baking powder (10 or 12 gram)
- 1 cup tahini paste (without flavoring)
- 1 cup sugar
- 200 gram soft butter
- 40 almond halves, for decoration

Directions:
1. Preheat oven to 180C. Mix all ingredients in a bowl, and knead to a dough. Divide into 40 equal sized balls.
2. Put the balls on a cookie sheet, 5 cm between them. Flatten each cookie slightly, and press half an almond on top.
3. Bake about 15 minutes, until golden. Cool a bit, remove from cookie sheet, and save in a closed container.
Chocolate Fudge Cookies

Ingredients:
- 1/2 cup oil
- 2 cups sugar
- 2 cups flour
- 1 cup cocoa
- 4 eggs
- 1 tsp vanilla extract
- 2 tsp baking powder
- icing sugar

Directions:
1. Mix ingredients except icing sugar and rolls into balls.
2. Roll in icing sugar.
3. Bake for 18 minutes. Cookies flatten whilst baking.
Coconut Craisin Oat Cookies

Ingredients:
- 1 cup flour
- 1 tsp baking powder
- 1/3 cup oil
- 2/3 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup oats
- 1/2 cup shredded coconut
- 1/2 cup craisins

Directions:
1. Preheat the oven to 175C degrees.
2. In a bowl, mix flour and baking powder. In a second bowl, mix oil, sugar, egg and vanilla. Add flour mixture and stir. Add oats, coconut and craisins.
3. Roll into balls, place on cookie sheet and slightly flatten.
4. Bake 15-18 minutes, until lightly browned. Cool.
Healthy Oatmeal Cookies

Ingredients:
- 1/2 cup whole-wheat flour (spooned and leveled)
- 1/2 cup all-purpose flour, (spooned and leveled)
- 1 teaspoon baking powder
- 1/3 cup vegetable oil
- 2/3 cup packed dark-brown sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1/2 cup rolled oats (not quick-cooking)
- 1/2 cup dried currants or raisins

Directions:
1. reheat oven to 350 degrees. In a medium bowl, whisk together flours and baking powder; set aside.
2. In a large bowl, whisk together oil, sugar, egg, and vanilla. Add flour mixture, and stir to combine; mix in oats and currants.
3. Using two tablespoons of dough per cookie, roll into balls; place on two baking sheets lined with parchment paper, 1 1/2 inches apart. Bake until lightly browned, 15 to 17 minutes, rotating sheets halfway through.
4. Cool 5 minutes on sheets, then transfer cookies to a wire rack to cool completely.
Honey Cookies

- 2/3 cup oil
- 1 cup sugar
- 1/4 cup honey
- 1 egg
- 1 tsp vanilla extract
- 2 cups flour
- 2 tsp. baking soda
- 1/2 tsp salt
- turbinado sugar, for rolling (optional)

Directions:
1. Mix all ingredients together. Roll in turbinado sugar.
2. Bake at 350F for 10 minutes.
Snickerdoodles

Ingredients:
- 1 1/2 cups white sugar
- 1/2 cup butter or margarine, softened at room temperature
- 1 tsp vanilla extract
- 2 eggs
- 2 3/4 cups all-purpose flour, sifted
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3 tbsp white sugar
- 3 tsp ground cinnamon

Directions:
1. Preheat oven to 400F.
2. Combine 1 1/2 cups white sugar, butter or margarine, whisk vigorously until creamy.
3. Add vanilla and eggs. Mix well.
4. Sift in flour, baking powder, baking soda and salt. Blend well.
5. Place dough in freezer or fridge to firm up so the cookies will be easy to shape.
6. Shape dough into 1 inch balls. Combine 3 tbsp sugar and 3 tsp cinnamon. Roll dough in sugar/cinnamon mixture and place 2 inches apart on ungreased cookie sheets.
7. Bake 8 to 10 minutes or until set. Immediately remove from cookie sheets.
