Ingredients:
- 1 cup self raising flour
- 1 tsp mustard
- 1/4 tsp cayenne pepper
- 1 large onion, finely chopped
- 3 cups grated zucchini
- 1 cup grated cheese
- 1/2 cup oil
- 5 large eggs, lightly beaten
- salt & pepper
Directions:
Preheat oven to 180C.
Grease a 20 cm pie dish. Dust the greased dish with flour and set aside.
Mix the flour, mustard and cayenne pepper together in a small bowl. Set aside.
Heat a small frying pan and sauté onion in 2 tbsp of oil until browned, about 5 minutes.
Place onion in large bowl and add the zucchini, grated cheese, oil and eggs. Stir thoroughly.
Add flour mixture until flour is just incorporated. Tip the batter into the floured quiche dish.
Bake for 30-40 minutes, or until quiche is well risen and lightly browned.
Can be frozen.
