Calzones

Ingredients:
- 1 can (10 oz) refrigerated pizza crust
- 1 cup shredded reduced-fat mozzarella cheese
- 32 slices pepperoni
- 1 cup part-skim ricotta cheese
- 1 cup frozen bellpepper and onions, thawed and patted

Directions:
1. Heat oven to 425°F. Coat a baking sheet with non stick spray.
2. Unroll pizza crust on a cutting board, and stretch dough into a 12" square. Cut in quarters (you'll have 4 6" squares).
3. For each calzone: sprinkle 2 tbsp shredded cheese on right half of square, leaving a 1/2" border on top, bottom and right side. Top with 8 slices of pepperoni, 1/2 cup ricotta, another 2 tbsp shredded cheese and ¼ cup pepper mixture.
4. Fold left side of dough over filling; press edges together to seal, place on prepared baking sheet; poke 4 slits in top with sharp knife to let steam escape.
5. Bake 10 to 12 minutes until golden.
Creamy Potatoes

Ingredients:
- 10 potatoes
- pinch of salt
- 8 slices yellow cheese
- 2 containers sweet cream
- 1.5 tbsp soup powder
- 1 cup milk

Directions:
1. Cook potatoes while peeled with the salt. When they are soft. take them out of the pot and let cool. Peel and slice into thick slices, about 1 cm wide. Put in small baking dish, and put cheese on top.
2. In a medium saucepan heat cream and soup powder. When the mixture thickens, add the milk and cook a few more minutes on a medium flame. Pour over the cheese.
3. Bake in a preheated oven on medium-high temperature, until browned and cheese has melted.
Pizza Bubbles

Ingredients:
- 1 pizza pie dough
Filling:
- 8 oz mozzarella cheese
- 1 1/2 cups pizza sauce
Butter mix:
- 1 stick butter
- 2 cloves garlic, crushed
- 1 tsp oregano
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 1/4 tsp crushed red pepper

Directions:
1. Preheat oven to 350F.
2. Divide dough into 20 equal balls. Flatten each ball.
3. Make the filling: Combine ingredients. Place 1 tbsp of filling into center of each dough. Pinch together. Place seam side down into 1 10-inch and 1 8-inch round pan. Filling the pans with balls.
4. Make the butter mixture: Melt all ingredients in a sauce pan. Pour sauce over pizza bubbles.
5. Bake uncovered for 40 minutes.
Pumpkin Baked Ziti

Ingredients:
- 1 lb penne pasta, cooked al dente
- 1 15 oz can pumpkin puree
- 1/2 tsp garlic powder
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1 tsp oregano
- 1/4 tsp black pepper
- 1/2 cup milk
- 1 cup cottage cheese
- 1 cup shredded cheese, plus more for topping

Directions:
1. Preheat oven to 350F and grease a 9X13 baking dish.
2. Mix together the pumpkin, spices, milk, cottage cheese, and shredded cheese.
3. Add in the cooked pasta and mix to combine.
4. Top with more cheese and bake uncovered till golden brown, about 20 minutes.
