Barbecue Salmon Special

Ingredients:

- 1/4 cup balsamic vinegar
- 1/4 cup dry red wine
- 1 tsp. garlic, minced
- 1 tsp. fresh ginger, grated
- 1/4 cup softened butter
- 1 tbsp shallots, minced
- 1 tsp. fresh parsley, chopped
- 4 Alaskan salmon steaks or fillets (4 to 6 oz. each)

Directions:

1. Combine vinegar, wine, garlic and ginger in flat dish or gallon-size ziplock plastic bag.
Place salmon in marinade; turn several times to coat. Cover, if needed, and refrigerate for 1 hour, turning salmon over after 30 minutes.

2. Grill salmon on oiled hot grill, turning once during cooking, about 6 to 12 minutes per Inch of thickness. Do not overcook.
3. Serve with sprinkles of shallots and parsley.

Fancy Fish with Hungarian Letcho

Ingredients:

- salt
- 8 salmon or flounder fillets
- 1 onion
- 1 red pepper
- 1 green pepper
- 1 orange pepper
- 1 yellow pepper
- 1 tomato
- 1 carrot, optional
- 1 squash, optional
- 1 1/2 tsp salt

Directions:

1. Salt fillets lightly and set aside in baking pan. Cut onion in four and slice. Cut peppers into strips. Slice tomato in half and then strips. Thinly slice carrot and squash. Saute onion until golden.
2. Add peppers and cook until almost soft.
3. Add tomato and salt. Cook on low flame for 15 minutes. Add carrot and squash and cook for another 15 minutes or until somewhat soft. Pour on top of salted fillets and bake, covered, for 35 to 40 minutes at 350F.
4. For a fancier presentation, spread mayonnaise or ketchup (or a combination of the two) on fillets and roll up. Fasten with a toothpick and top with vegetables. Bake, Covered, for 35 to 40 minutes at 350F.

Moroccan Salmon with Diced Carrots

Ingredients:

- fresh garlic
- paprika
- oil
- cumin
- turmeric
- salt
- pepper
- 2 bay leaves
- cilantro
- chicken consommé (optional) 
- fresh diced carrots
- salmon

Directions:

​1. In a pan put some fresh garlic, paprika, oil, a little cumin, turmeric, salt, pepper, 2 bay leaves and lots of chopped cilantro, chicken consommé (optional). Add fresh diced carrots, a little water (the sauce has to be a little thick), put each piece of salmon in this sauce, transfer to aluminium pan, cover and put in the oven at 350 for 45 min and then 15 min uncover.
