Ingredients:
- 1 cup flour
- 1 tsp baking powder
- 1/3 cup oil
- 2/3 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup oats
- 1/2 cup shredded coconut
- 1/2 cup craisins
Directions:
Preheat the oven to 175C degrees.
In a bowl, mix flour and baking powder. In a second bowl, mix oil,
sugar, egg and vanilla. Add flour mixture and stir. Add oats, coconut and craisins.
Roll into balls, place on cookie sheet and slightly flatten.
Bake 15-18 minutes, until lightly browned. Cool.
