Bombay Spiced Potatoes

Ingredients:
- 4 large potatoes, cut into chunks
- 2 tsp salt
- 4 tbsp sunflower oil
- 1 garlic clove, finely chopped
- 2 tsp mustard seeds
- 1 tsp turmeric
- 1 tsp ground cumin
- 1 tsp ground cilantro
- 1 tbsp lemon juice
- salt and black pepper, to taste

Directions:
1. Fill a pot with water and add 2 tsp salt and the potatoes. Bring to boil and simmer for about 4 minutes until just tender. Drain.
2. Heat the oil in a large frying pan and add the garlic along with the mustard seeds, turmeric, cumin, and cilantro. Fry gently for about 2 minutes, stirring until the mustard seeds start to pop.
3. Add the potatoes and stir-fry over a moderate heat for about 5 minutes until heated through and well-coated with the spicy oil. Add salt and pepper according to taste and sprinkle with lemon juice.
Brabant Sweet Potatoes

Ingredients:
- 2 large sweet potatoes, peeled and cubed
- 1/4 cup butter or margarine
- 1 tbsp garlic, minced
- pinch of paprika
- pinch of salt
- 1 tbsp fresh parsley, finely chopped

Directions:
1. Place potatoes in a large sauce pan and add water to cover; boil the potatoes until tender, about 15-20 minutes. Drain the potatoes and set aside.
2. Melt the butter or margarine in a large skillet and cook the garlic a few minutes over medium heat. Add the potatoes, paprika, salt, and parsley. Cook briefly, stirring, until the potatoes are well coated with the seasonings.
Serve hot.
Home Fries-Style Potatoes

Ingredients:
- 5 potatoes, cut into small chunks
- red bell pepper, cubed (optional)
- black pepper
- kosher salt
- sesame seeds
Sauce:
- 1/2 cup sweet chili sauce
- 1/2 cup olive oil*
- tbsp paprika
- pinch of salt
- 1/2 cup water

Directions:
1. Mix all sauce ingredients. Pour over potatoes and peppers, mix and transfer to baking dish. Sprinkle some black pepper, kosher salt and sesame seeds. Cover with silver foil and bake at 200C for an hour.
2. After 1 hour remove foil, lower heat to 170C and continue baking until brown.
* Would probably work with 1/4 cup oil.
Potato Packages

Ingredients:
- 1 lb potatoes, scrubbed and thinly sliced
- 1/2 large onion, peeled and thinly sliced
- 1 tbsp olive oil
- 6 tbsp canned crushed tomatoes with basil
- 1/2 tsp garlic powder
- 4 tbsp grated parmesan cheese

Directions:
1. Preheat grill.
2. Coat an 18-inch square sheet of heavy-duty aluminium foil with cooking spray.
3. Mix potatoes, onion, olive oil, tomatoes, and garlic powder.
4. Place potato mixture on foil and flatten. Fold foil edges together to seal.
5. Cook over medium heat for 30 minutes, or until done.
6. Open package carefully; add cheese.
